Peat smoked Salmon and Sea Trout from the Hebridean Smokehouse - a small family run business on the island of North Uist. From these pristine waters, using the finest of fish, sea salt and peat cut from the Uist moors, they produce smoked salmon and sea trout to the highest quality with a unique and distinctive peaty flavour. To maintain quality, smoking is done in small batches, relying on traditional methods, including hand-slicing. (Great Taste Awards Gold Medal winners 2003/4).

Peat-Smoked Salmon Slices - The fish used come from the fast flowing tidal waters around the Island of Grimsay at the southern end of North Uist. After filleting, the sides of salmon are salted by hand using the purest of Dead Sea salt, then gently smoked in kilns with peat cut from the moors of North Uist.

Peat Smoked Sea Trout Slices - A truly unique product, where the sea trout originate from the wild stock that spawn in the peaty fresh waters of North Uist. These fish are grown at low density and without the use of any chemical treatments that could harm the pristine environment found in the Outer Hebrides. The sea trout are given a lighter peat smoking than the salmon to retain their delicate flavour and texture.

Hot Smoked Salmon Portions - Smoked with peat before being gently cooked in the same kiln. This lengthy process ensures each portion piece is as succulent as possible.
